Till-JS 3b00303e7b fix(planta-backend): correct health check endpoint to /api/v1/health 
- Update Dockerfile HEALTHCHECK to use /api/v1/health
- Update docker-compose.macmini.yml health check endpoint
- Increase start_period to 30s
