3f57b842d8 fix(ci): fix test-config and upgrade vitest to v4 
- Remove deprecated watchExclude from vitest configs
- Upgrade vitest to 4.x and @vitest/coverage-v8 to match
- Upgrade @vitest/ui to 4.x
