docs(mac-mini): refresh container counts + memory budget after Phase 2c+2d

53→45 running, 9.6 GiB nominal → ~6 GiB nominal, build-app.sh's
monitoring-stop trigger no longer fires. Cross-link to PLAN_OPTION_C.md
for the GPU-box-side picture (grafana/git/stats/glitchtip live there
via the mana-gpu-server tunnel).
