docs: update CLAUDE.md with current project state

Browse source 
- Update projects table (22 apps listed with correct app types)
- Fix services tree structure (all services with correct tech stack)
- Add missing services (mana-sync, mana-matrix-bot, mana-analytics, etc.)
- Fix mana-search description (Go, not NestJS)
- Fix indentation inconsistencies
